Alvin is a young coffee producer from El Volcancito, Guatemala, whose journey began with protecting his community’s natural resources. After discovering pollution in local water sources, he joined others in monitoring and safeguarding them — a commitment that later guided him into coffee production.
At just 13, Alvin processed his first small harvest, learning everything by hand and improving each year. Today, he produces high-quality specialty coffees using environmentally friendly anaerobic methods that enhance flavour while conserving the region’s scarce water.

Processing details: Cherries are collected when ripe and put into
plastic bags to undergo a first fermentation for 24 hours before being
de-pulped After de-pulping, the coffee undergoes an anaerobic dry
fermentation for 36 hours in sealed plastic bags. The seeds are then
moved to raised beds where they are dried for 14 days, first under
direct sunlight and then covered in a plastic tunnel to control the
temperature.
